Thais and her burger truck
Kampot, Cambodia – April 2023
This is Thais’s burger truck. Widely known among the people of Kampot. Thais works seven days a week to provide people from fresh chicken, beef and prawn burgers. “Everyday I make fresh burgers. For my clients that come eat at my truck, but also for big orders made by some NGO’s nearby. Sometimes more than 50 burgers

They pick them up at lunchtime so sometimes I start making burgers at 8 am. I have another job in a restaurant close to here. I work there for free to help some of my relatives. Sometimes we only close the restaurant at 4 am. When that happens I sleep in my food truck on a little matras. So I can start making the burgers at 8 again.”

“You look a little bit like my oldest son. He is 27 and lives in Phnom Penh. He studies international law and has two jobs on the side. Sometimes he watches cooking shows and he tells me what I can adjust in my burgers. He has an excellent taste for combinations of different flavours.

I have three other children. Two of them are adopted. The youngest one I found him one day in front of my door. Some people just left him there. This is a small city so I don’t think he was in front of my door by coincide. Maybe people knew that I would take care of him.

I never considered not keeping the child. I had little money at the time, but I knew that the baby was counting on me. He has since grown into a fine young man. I can’t imagine life without him anymore

This is my son’s idea. Sweet and salty. Give it a try. Mandarin orange on a chicken burger. It sounds strange, but it tastes amazing. Sometimes you have to get a little bit crazy.
